Sunflower Hummus is a wonderful, delicious dish that is packed with vitamins and tastes sooooo delicious. I make this dish at least once a week and enjoy it in between my servings of green soups. Sometimes, I blend the two: green soup and sunflower hummus together.
Sunflowers are packed with magnesium and potassium, and offer the right kind of fats for building cell membranes. Sunflower seeds also contain Vitamins A, D, K and a rich source of Vitamin E, fighting “free radicals” that run rampant in the body causing disease. They also provide a healthy dose of B vitamins, which are difficult to get through a mainstream diet. This is an excellent dish to quickly gain many of the nutrients necessary for good health.
Sunflower Hummus Recipe
1 and half – 2 Cups of organic sunflower seeds
(You can use roasted, salted sunflower seeds as well. You may want to soak the seeds overnight to initiate the sprouting process, which increases the nutritional value exponentially.)
1/8th of a Cup of tahini or 1-2 Tablespoons
Juice of 1-2 lemons (according to taste)
1/4th to 1/2 Cup of water
Blend and puree all ingredients
Serve with cucumber slices, chips, celery stalks or carrot sticks
Delicious and easy!
TIP: mix in a 1/2 cup of Green Soup…even more delicious!
